The top board looks like particle board.
MDF is made with smaller particles and chemicals so it is darker and more dense.
It is somewhat moisture resistant, but over time it swells. Especially after it gets carved up from use or has been surfaced.

It is what it is!

MDF = Medium Density Fibreboard.

To me it is particle board, just made from smaller particles.

MDF has glass, metal shavings, wood particles, and whatever else gets swept up. OSB chip board is only wood as a substrate. MDF holds pretty good tolerances when machining, and doesn't move much with humidity and moisture, unless it's alot of both. Chipboard goes all over the place.
I put a piece of 3/4 OSB flooring underlayment for a spoil board on my machine. I shoot screws right into it when clamping my work piece down. 1.25" screw through 3/4 oak hold down and it works fine.
